Recipes: A Journey to Asia

Serves: 4
Ingredients:
- 1 lb (4 packs) udon noodles
- 1 small knob ginger
- 2 potatoes
- 1 carrot
- 1 cucumber
- cornstarch paste
(6 tablespoon water,2 tablespoon starch)
- 2 tablespoon olive oil
- 1 lb pork belly
- 2 onions
- 4 cups water
- 1 stalk green onion
Ingredients for seasonings:
- 1/2 lb black bean paste
- 2 tablespoon sugar
- 1 tablespoon
- 1 tablespoon Mat-sool (mirin, sweet sake)
- 2 tablespoon sesame oil
- 2 tablespoon soy sauce
- 1 cup water
Cooking Directions:
- Mix all the ingredients for the black bean sauce and set aside.
- Blanch udon noodles and put in a bowl and set aside.Thinly slice ginger.
- Dice pork belly, potato, onion, and carrot.
- Julienne cucumber and green onion. Set aside for garnish.
- In a heated pan, add olive oil and lightly saute ginger.Add pork belly and saute.
When pork belly is light brown,add potato, onion, and carrot.
- Add black bean sauce into the fully cooked pork belly and vegetables. Add water and cornstarch and boil.Ladle the sauce over the udon noodles and serve with cucumber and green
onion on top.
