Halibut Fillet in Oyster Sauce


Serves: 4
    Ingredients:
  • 2/3 lb halibut fillet
  • 1 oz cooked bamboo shoot
  • 1/2 oz carrot sliced
  • 1 oz snow peapod

  • 2 oz straw mushroom
  • 1/2 oz ginger
  • 2 stalks scallion
 
    Seasonings 1:
  • 1/2 tablespoon soy sauce
  • 2 egg whites

  • 1 tablespoon rice wine
  • 1/2 tablespoon corn starch
    Seasonings 2:
  • 1 tablespoon oyster sauce
  • 1/2 teaspoon sugar
  • 4 tablespoons water

  • 1/2 teaspoon
  • 1/2 tablespoon corn starch paste
  • a few drops sesame oil
    Cooking Directions:
  1. Slice fish into 1/3” thick, then marinate with seasoning (1) for 30 minutes.
  2. Heat 3C oil to 375F; deep-fry the fish till done, drain.
  3. Heat 2 tablespoons oil to sweat scallion (1” section), and ginger, then add vegetables, fish and seasoning (2), keep stir-frying quickly and carefully until evenly mixed. Serve hot.
