Halibut Fillet in Oyster Sauce |
Serves: 4
Ingredients:
- 2/3 lb halibut fillet
- 1 oz cooked bamboo shoot
- 1/2 oz carrot sliced
- 1 oz snow peapod
- 2 oz straw mushroom
- 1/2 oz ginger
- 2 stalks scallion
Seasonings 1:
- 1/2 tablespoon soy sauce
- 2 egg whites
- 1 tablespoon rice wine
- 1/2 tablespoon corn starch
Seasonings 2:
- 1 tablespoon oyster sauce
- 1/2 teaspoon sugar
- 4 tablespoons water
- 1/2 teaspoon
- 1/2 tablespoon corn starch paste
- a few drops sesame oil
Cooking Directions:
- Slice fish into 1/3” thick, then marinate with seasoning (1) for 30 minutes.
- Heat 3C oil to 375F; deep-fry the fish till done, drain.
- Heat 2 tablespoons oil to sweat scallion (1” section), and ginger, then add vegetables, fish and seasoning (2), keep stir-frying quickly and carefully until evenly mixed. Serve hot.
